Pierre Marcolini puts his own trademark twist on traditional praline recipes with novel textures, surprising new flavours, less sugar and more dried fruits. With no chocolate shell to conceal the sublime praline interior, its subtlety and intensity are enhanced even further.

Crafted in our workshop, pralines are composed of a traditional caramel and roasted dried fruit, lightly crushed to preserve their "raw" state, while respecting their exceptional origins.

Three different textures - crunchy, soft and mousse - combined with gourmet flavours to create the perfect balance. This box of 18 pralines features an assortment of different recipes: 

  • A sweet praline made from Vietnamese cashew nuts
  • A soft praline with hazelnuts from Piedmont and cacao nibs 
  • A crunchy praline with pistachios from Iran 
  • A soft praline with almonds infused with Java coffee
  • A crunchy praline with almonds infused with cinammon from Ceylon

  • A traditional salted caramel praline with hazelnuts from Piedmont

  • A crunchy praline with pieces of Montélimar nougat.
