For beautiful summer's days and as an after-dinner treat to be enjoyed in the sun, Pierre Marcolini's take on the iconic Italian "Dolce": amaretti. A soft centred biscuit with ground almonds and very little sugar content. The sweetness of the almond combines wonderfully with the acidity of the lemon.
